Rustic Italian Sausage Sandwich


  • 4 links of HOT Italian sausage
  • 4 links of SWEET Italian sausage
  • 4 slices of vidalia onion
  • 4 Portuguese rolls, smaller size
  • Dijon mustard, to taste
  • Fourth Creek Pepper Relish of choice, to taste


Butterfly sausage links lengthwise and press into patties, leave the casing on. Grill patties to desired doneness, casing-side down first. Toast rolls. On the bottom half of each roll, spread mustard and place an onion slice. Stack one HOT and one SWEET patty on each roll and top with plenty of Fourth Creek Red Pepper Relish.
