Rustic Italian Sausage Sandwich


  • 4 Links of HOT Italian Sausage
  • 4 Links of SWEET Italian Sausage
  • 4 slices of Vidalia Onion
  • 4 Portuguese hard-rolls, small size
  • Dijon Mustard to taste
  • Fourth Creek Pepper Relish of choice to taste


Butterfly sausage links lengthwise & press into patties, leave the casing on. Grill patties to desired doneness (casing side first up so patties do not overly curl). Lightly butter & toast rolls. On the bottom half of each roll, spread mustard and place onion slice. Stack one HOT & one SWEET patty on each roll & top and plenty of Fourth Creek’s Pepper Relish.
