Divide beef into 4 equal portions. Split each portion 60/40 to create a wider base patty and a smaller top patty of equal thickness. Place Brie and Relish in center of wider base patty and cover with smaller patty. Form patties together by folding edges of the base patty up around top patty, pinching around and slightly twisting the edges together. Gently compress & smooth the edges to create a good seal. Grill 2-3 minutes per side for medium rare. Toast buns, garnish to taste and top with more Relish!!
