Smoky Chipotle Corn Relish

Corn relish that grew up around a fire. Sweet kernels, real smoke, slow heat, and an answer to the question "what could I do with this fish?" The dark horse of the lineup. The one nobody picks first and everybody picks twice.

Use it

• On crab cakes.
• Folded into tuna salad with celery and a little dijon.
• Over grilled salmon with a squeeze of lime.
• On a quesadilla with sharp cheddar.

Ingredients: Sweet Corn, Onions, Distilled Vinegar, Cane Sugar, Red Bell Peppers, Water, Salt, Dried Chipotle Peppers, Mustard Seeds, Thyme, Xanthan Gum.
