Broiled Salmon with Sweet Pepper Glaze

Serves 4. About 15 minutes.

Ingredients

  • 3 tablespoons Fourth Creek Sweet Red Pepper Relish
  • 4 salmon fillets (5-6 oz each), skin on

  • 1 tablespoon olive oil

  • Kosher salt and freshly ground black pepper

  • 1 teaspoon Dijon mustard

  • 1 teaspoon lemon juice

  • Fresh dill or parsley, for garnish

  • Lemon wedges, for serving

Directions

  1. Preheat the broiler with a rack 6 inches below the heat. Line a sheet pan with foil.
  2. Pat salmon fillets dry. Rub with olive oil and season generously with salt and pepper. Place skin-side down on the prepared pan.
  3. In a small bowl, stir together Fourth Creek Sweet Red Pepper Relish, Dijon mustard, and lemon juice.
  4. Broil salmon for 5 minutes. Pull the pan out, brush the glaze generously over the top of each fillet, and return to the broiler for 3-5 minutes more, until the glaze is bubbling and slightly caramelized at the edges. The salmon should flake easily with a fork.
  5. Garnish with fresh herbs and serve with lemon wedges.
