Ingredients
- 1/3 cup Fourth Creek Sweet Red Pepper Relish, drained

8 oz sharp cheddar cheese, finely grated

4 oz cream cheese, softened1/4 cup mayonnaise

1/2 teaspoon smoked paprika
- 1/4 teaspoon garlic powder
- Kosher salt and freshly ground black pepper
- 8 slices sourdough or thick country white bread

4 tablespoons unsalted butter, softened
Directions
- In a bowl, combine grated cheddar, cream cheese, mayonnaise, drained Fourth Creek Sweet Red Pepper Relish, smoked paprika, and garlic powder. Mix with a fork until fully combined and spreadable. Season with salt and pepper to taste. Reserve about 1 cup of the pimento cheese for serving in a small ramekin alongside the sandwiches.
- Spread softened butter on one side of each bread slice. On the unbuttered side of four slices, spread a generous layer of pimento cheese, about 1/4 cup per sandwich. Top with the remaining bread slices, buttered side out.
- Heat a skillet over medium-low heat. Cook sandwiches 3-4 minutes per side, pressing gently with a spatula, until bread is deeply golden and cheese is fully melted.
- Cut each sandwich diagonally. Plate beside the reserved ramekin of pimento cheese for dipping.
